Wednesday: Jollof Bulgur Wheat, Steamed Pumpkin Leaves and Egg

What I love about this dish

Bulgur wheat is very filling, highly nutritious and a great substitute for white rice. It gives you that same feeling in your mouth so you don’t feel deprived.

Ingredients

Bulgur wheat, Fresh tomatoes, Fresh peppers, Onions, Olive oil, Ugwu leaves, Egg

 Process

1. Pour a tablespoon of olive oil into a pot

2. Chop tomatoes, onions and pepper and pour into a pot

3. Allow to simmer 

4. Add ginger and garlic 

5. Add salt to taste

6. Let it simmer for a bit

7. Add bulgur wheat to mixture

8. Add more water into the pot so the bulgur wheat cooks and softens ( cook time is about 30-35 mins)

9. Chop pumpkin leaves , add chopped onions and pepper to the leaves allow to steam and add salt to taste

10. Boil egg
